This popular coffee is a washed lot from the co-operative of Cafe El Zapoteco, which is a group of some 180 coffee producing families led by Romulo Chavez in Sierra Jurez where the community bonds run deep. Washed coffees like this one are often de-pulped one day after harvest then left to ferment for between 12-36 hours. They are then dried on rooftops under the direct sun. Though sun-dried, the drying is fairly slow due to cool air, high humidity and misty afternoons in the region.
